This Feta and Truffle Tapenade Chicken is such a juicy and flavourful recipe that will quickly become a regular truffle dish in your home!

Ingredients:
4 pounds of chicken breast
3 tbsp olive oil
1.5 tsp Stonebarn Truffle Seasoning (or Stonebarn Truffle Chilli Seasoning – depending on how spicy you like it)
0.5 tsp Stonebarn Truffle Pink Himalayan Salt
1 tsp pepper
2 tbsp Stonebarn Truffle Tapenade
2 tbsp feta cheese
Instructions:
- Preheat oven to 200°C and line a sheet pan with aluminum foil.
- In a gallon Ziploc bag combine olive oil, Stonebarn Truffle Seasoning, Stonebarn Truffle Pink Himalayan Salt and pepper, mush them together until well combined.
- Cut the chicken breast in half but leave a small portion of it still connected to create a butterfly cut.
- Place the chicken into a Ziploc bag and shake the chicken until it is completely coated in the seasoning.
- Place the chicken onto the sheet pan so they are open. Spread 1 tablespoon of Stonebarn Truffle Tapenade onto each chicken breast and spread on half.
- Sprinkle about 1 to 1 1/2 tablespoons of feta cheese on top of the Stonebarn Truffle Tapenade.
- Roll the chicken up so that you end up with the tapenade in the middle of the chicken roll.
- Place the chicken seam side down.
- Bake for approx. 40 minutes.
