Feta & Stonebarn Truffle Tapenade Chicken Recipe

This Feta and Truffle Tapenade Chicken is such a juicy and flavourful recipe that will quickly become a regular truffle dish in your home!

Ingredients:

4 pounds of chicken breast
3 tbsp olive oil
1.5 tsp Stonebarn Truffle Seasoning (or Stonebarn Truffle Chilli Seasoning – depending on how spicy you like it)
0.5 tsp Stonebarn Truffle Pink Himalayan Salt
1 tsp pepper
2 tbsp Stonebarn Truffle Tapenade
2 tbsp feta cheese

Instructions:

  1. Preheat oven to 200°C and line a sheet pan with aluminum foil.
  2. In a gallon Ziploc bag combine olive oil, Stonebarn Truffle Seasoning, Stonebarn Truffle Pink Himalayan Salt and pepper, mush them together until well combined.
  3. Cut the chicken breast in half but leave a small portion of it still connected to create a butterfly cut.
  4. Place the chicken into a Ziploc bag and shake the chicken until it is completely coated in the seasoning.
  5. Place the chicken onto the sheet pan so they are open. Spread 1 tablespoon of Stonebarn Truffle Tapenade onto each chicken breast and spread on half.
  6. Sprinkle about 1 to 1 1/2 tablespoons of feta cheese on top of the Stonebarn Truffle Tapenade.
  7. Roll the chicken up so that you end up with the tapenade in the middle of the chicken roll.
  8. Place the chicken seam side down.
  9. Bake for approx. 40 minutes.
