Exceptional French Black Perigord Truffles from Manjimup, Western Australia

Paired with Amelia Park Cab Merlot 👌🏼 Served 3 Beef Pack of beef short ribs 1/4 cup of plain flour 2 carrots 1 onion 4 sticks of celery 3 garlic cloves Rosemary 1 bottle of red wine (I used the Jacob’s creek Cab Merlot $8) 750mls of beef stock (I used the oxo beef stock cubes) Mash potato 4 large potatoes 1/2 cup of thickened cream 100g of butter Salt and Pepper Splash of truffle oil Meat 1. Preheat oven to 160 degrees fan forced. 2. Coat beef ribs in flour. Heat up a small amount of olive oil in a pot and sear the crust until golden brown. Remove the ribs and set aside on a plate 3. Dice onion, celery, carrot and garlic. Add to the pot and fry off until soft. 4. Add ribs back to the pot. Add an entire bottle of red wine and stock. Allow to simmer. 5. Cover pot with a lid. Put into the oven and cook for 3.5 -4 hours. 6. Remove and reserve the wine mixture. Reduce wine sauce. Mashed potato 1. Peel and dice 4 potatoes. Add to a pot with cool salted water. Cook until soft ++ 2. Drain potatoes and using a stainless steel mouli (this is a French cooking utensil, this helps create super soft potato) then pass the potato through. 3. Heat thickened cream, butter, salt and pepper. 4. Stir cream mixture into the potato. Brocolini 1. In a pot add a few cups of water and broccoli. Heat until boiling. Truffle & Cream Cheese Brussel Sprouts Ingredient Truffle & Cream Cheese Brussel Sprouts Ingredients: Olive Oil 250g Cream Cheese 2 tsp Stonebarn Truffle Seasoning 400g Brussel Sprouts (washed & halved) Stonebarn Truffle Honey Grease baking dish with olive oil. Spread cream cheese in base of baking dish. Sprinkle 2 tsp of Stonebarn Truffle Seasoning over cream cheese. Place brussel sprouts in rows face down on top of cream cheese. Coat with olive oil and cook in the oven for 30mins. Drizzle Stonebarn Truffle Honey over the top before serving. Truffle Onion Ring Chips with Truffle Aioli Dip! I Truffle Onion Ring Chips with Truffle Aioli Dip! Ingredients: 2 small white onions, sliced 1/4 inch thick rounds 200g grated parmesan cheese 1/2 tbsp (truffle) olive oil Stonebarn Truffle Chilli Seasoning, to taste Serve with Stonebarn Truffle Aioli Preheat oven to 200°C. Line an 12×17 inch rimmed baking sheet with parchment paper. Sprinkle the baking sheet with the cheese so that there is a thin even layer of cheese. Next, line up the onion ring slices so that they are not overlapping but right next to one another. Brush tops of onion rings with (truffle) olive oil. Then season the tops with Stonebarn Chilli Seasoning. Bake for 18 minutes or until golden brown. Allow to cool for 5-10 minutes and then break apart to serve. Have a go at making these Protein Pancakes using our truffle butter and/or truffle honey to give them a delicious truffle taste 😋 ¾ cup 80g almond flour ½ cup 100g Cottage cheese 2 large eggs 1 tablespoon melted (truffle) butter 1 tablespoon sugar/sweetener 1 teaspoon vanilla extract 1 teaspoon baking powder Pinch of salt Stonebarn Truffle Honey Place all ingredients into a bowl and mix together with blender. Spoon mixture into frying pan using butter to make sure mixture doesn't stick to pan. Cook for 2 minutes or until bubbles form on the surface, flip and do the same again.
