Ingredients: - ½ cup popcorn kernels - ¼ cup Black Truffle Butter - 2 tablespoons Black Truffle Oil - 1 cup of grated parmesan cheese - 2 tablespoons finely chopped flat-leaf parsley - 1 oz of Black Winter Truffle - Salt and pepper Steps: *Melt 2 tbsp of truffle butter in a heavy pot over medium-high heat. Add 3–4 popcorn kernels, cover, and wait for them to pop. Add remaining kernels, cover, remove from heat for 30 seconds. *Return to heat and shake pot occasionally until popping slows. Remove from heat and transfer popcorn to a large bowl. Drizzle the truffle oil over popcorn and gently toss. *Add grated parmesan, minced parsley, salt, and pepper. Toss again to combine. In biology, it means mutual relations between living organisms—but sometimes, we also encounter it in the business world. Below is a recount by @ilsar.truffles about their visit to our farm last season: This year we had the privilege to visit Stonebarn, located in the Perth region on the western coast of vast Australia. We came to explore different growing techniques and practices, to share and gain knowledge about the business and culinary sides of the truffle world, and also to breathe in a moment of cold winter air and remind ourselves that truffle season is approaching. Over the past decade, the truffle market in Australia has experienced significant growth and has become one of the world’s most important and fascinating truffle regions. There are numerous farms in Australia that together produce around 15 tons of truffles annually—mainly for export. Thanks to the high quality of Australian truffles and the strong global reputation they’ve built, a local truffle culture has also emerged across the continent. Today, winter black truffles can be found in almost any restaurant that considers itself noteworthy. It’s very hard to summarize or convey everything we’re absorbing here daily—even while writing these very lines. But what can we share at this point?
