Symbiosis is a central term when it comes to truffles. It refers to a complex relationship that takes place both above and below the ground. In biology, it means mutual relations between living organisms—but sometimes, we also encounter it in the business world.

Below is a recount by @ilsar.truffles about their visit to our farm last season:

This year we had the privilege to visit Stonebarn, located in the Perth region on the western coast of vast Australia. We came to explore different growing techniques and practices, to share and gain knowledge about the business and culinary sides of the truffle world, and also to breathe in a moment of cold winter air and remind ourselves that truffle season is approaching.

Over the past decade, the truffle market in Australia has experienced significant growth and has become one of the world’s most important and fascinating truffle regions. There are numerous farms in Australia that together produce around 15 tons of truffles annually—mainly for export.

Thanks to the high quality of Australian truffles and the strong global reputation they’ve built, a local truffle culture has also emerged across the continent. Today, winter black truffles can be found in almost any restaurant that considers itself noteworthy.

It’s very hard to summarize or convey everything we’re absorbing here daily—even while writing these very lines. But what can we share at this point?
As some of our European clients have already told us, the aromas of our truffles and those of the Australians share a similar character, likely thanks to the rich and fertile soils and the similar terroir.

6 large hard boiled eggs
3 tbsp Stonebarn Truffle Mayonnaise
1 tsp Stonebarn Truffle Mustard
1 tsp Apple Cider Vinegar
Stonebarn Chilli Seasoning (optional)

Peel the eggs and slice in half lengthwise. Remove the yolk to a small bowl and place the egg whites on a plate. Mash the yolks with a fork add the mayonnaise, mustard and apple cider vinegar. Stir everything together until smooth. Use a spoon or a piping bag to add a portion of the mixture into the holes of each egg white.
