If you’re fed up of the usual roasted veggies you serve with your roast meat, then try this simple truffle vegetable and lentil side dish instead. Drizzling our Stonebarn Black Truffle Caesar Dressing over your roasted veggies is a quick, simple way of livening up your meal. Perfect for lunch or dinner (especially slow-cooked lamb as featured in photo)!

Ingredients:
150g green beans trimmed
2 cups broccoli florets
1 cup cherry tomatoes whole
1 can lentils drained
1 red onion sliced
1 tbsp olive oil
150ml Stonebarn Truffle Caesar Dressing
Instructions:
- Preheat oven to 200°C.
- Prepare the vegetables. Cut the green beans, broccoli and red onion as directed. Place them in a large bowl, add the whole cherry tomatoes and drained lentils.
- Drizzle vegetables with olive oil (or Stonebarn Truffle Oil). Toss everything together until well coated, season with salt and pepper (or Stonebarn Truffle Seasoning). Spread the mixture on a baking tray and roast for about 25 minutes, or until the vegetables are tender and slightly browned.
- Once the veggies are roasted, serve onto plates. Drizzle the Stonebarn Truffle Caesar Dressing over the top. Serve with a meat of your choice (slow-cooked lamb is featured in the picture above).
